From the tabletops to the tomatoes, James Alefantis's touch is everywhere at Comet Ping Pong.
Each year Alefantis and his team head out to Shippensburg, Pennsylvania, for a pilgrimage of the sauce. First stop, the Toigo Orchard, a family -owned farm. There they help harvest the ten tons (yes, tons) of organic tomatoes the farm grows each year just for the restaurant. After a very long day of picking, the tomatoes are loaded onto a truck and then driven off to Punxsutawny, Pennsylvania, home of the clairvoyant groundhog and one of the area's last canneries where Comet makes all of its pizza sauce for the coming year. There, hundreds of pounds of tomatoes get peeled, stewed, seasoned, and stored, but not before Alefantis tastes and refines the batches coming through, making tweaks and adjustments along the way until the red sauce is perfect and ready to be jarred.
